Together with the LUMA Foundation in Arles we are exploring opportunities to work with salt in the Camargue region in the south of France. The Camargue is a delicate ecological area with lots of wild birds (like flamingoes) and wild horses. Harvesting salt is one of the biggest industries in the Camargue, and the salt evaporation ponds provide an exquisite habitat for trekking birds. It is therefore essential that the salt harvest is maintained, yet economically the region is struggling. What solutions can we offer to improve the feasibility of this salt harvest, or: what can we make with salt?
